The default color of the pen is black, but you can change the pen properties (color, style, and thickness) using the Toggle Styling Bar, selecting the first little icon displayed on the Graphics View bar.

Selecting a different tool ends the freehand drawing process.

GeoGebra stores the notes you have traced in the Graphic View as an Images:image, so you can do any image operations with it (move, rotate, delete, etc.).
